Le chef fran\u00e7ais Marie-Antoine Car\u00eame, influenc\u00e9 par les techniques italiennes, a introduit la base de la p\u00e2te \u00e0 <em data-start=\"1038\" data-end=\"1045\">choux<\/em> qui allait plus tard devenir l&rsquo;<em data-start=\"1085\" data-end=\"1093\">\u00e9clair<\/em>. Popularis\u00e9e par Car\u00eame au XIXe si\u00e8cle, cette p\u00e2tisserie a fait son entr\u00e9e dans les caf\u00e9s et p\u00e2tisseries de Paris. L&rsquo;<em data-start=\"1247\" data-end=\"1255\">\u00e9clair<\/em> classique est compos\u00e9 de p\u00e2te \u00e0 <em data-start=\"1271\" data-end=\"1278\">choux<\/em> (une p\u00e2te l\u00e9g\u00e8re et a\u00e9r\u00e9e) cuite en barres longues et minces. Il est g\u00e9n\u00e9ralement fourr\u00e9 de cr\u00e8me p\u00e2tissi\u00e8re (cr\u00e8me anglaise), de cr\u00e8me au chocolat ou de cr\u00e8me fouett\u00e9e et recouvert d&rsquo;une couche de gla\u00e7age, souvent au chocolat ou au caf\u00e9. Lorsque le beurre a fondu, ajoutez la farine en une seule fois et continuez \u00e0 remuer vigoureusement jusqu&rsquo;\u00e0 ce que la p\u00e2te forme une boule et se d\u00e9tache des parois de la casserole. <\/p>\n<\/li>\n<li data-start=\"978\" data-end=\"1116\">\n<p data-start=\"980\" data-end=\"1116\">Retirez la casserole du feu et laissez la p\u00e2te refroidir l\u00e9g\u00e8rement. Incorporez les \u0153ufs un par un jusqu&rsquo;\u00e0 ce que la p\u00e2te soit brillante et lisse. <\/p>\n<\/li>\n<li data-start=\"1120\" data-end=\"1243\">\n<p data-start=\"1122\" data-end=\"1243\">Mettez la p\u00e2te dans une poche \u00e0 douille et tracez de longues lignes fines sur une plaque \u00e0 p\u00e2tisserie recouverte de papier sulfuris\u00e9 (environ 10 cm de long).<\/p>\n<\/li>\n<li data-start=\"1247\" data-end=\"1363\">\n<p data-start=\"1249\" data-end=\"1363\">Faites cuire les \u00e9clairs dans le four pr\u00e9chauff\u00e9 pendant 20 \u00e0 25 minutes, jusqu&rsquo;\u00e0 ce qu&rsquo;ils soient dor\u00e9s. Laissez-les ensuite refroidir compl\u00e8tement. <\/p>\n<\/li>\n<\/ul>\n<h4 data-start=\"1365\" data-end=\"1393\">2. <strong data-start=\"1373\" data-end=\"1393\">Pr\u00e9parez la garniture :<\/strong><\/h4>\n<ul data-start=\"1397\" data-end=\"1843\">\n<li data-start=\"1397\" data-end=\"1468\">\n<p data-start=\"1399\" data-end=\"1468\">Porter \u00e0 \u00e9bullition le lait avec la gousse de vanille (ou l&rsquo;extrait de vanille).<\/p>\n<\/li>\n<li data-start=\"1472\" data-end=\"1550\">\n<p data-start=\"1474\" data-end=\"1550\">Pendant ce temps, battez les jaunes d&rsquo;\u0153ufs avec le sucre et la f\u00e9cule de ma\u00efs jusqu&rsquo;\u00e0 obtention d&rsquo;un m\u00e9lange homog\u00e8ne.<\/p>\n<\/li>\n<li data-start=\"1554\" data-end=\"1665\">\n<p data-start=\"1556\" data-end=\"1665\">Versez lentement le lait chaud dans le m\u00e9lange d&rsquo;\u0153ufs tout en continuant \u00e0 fouetter pour \u00e9viter que les \u0153ufs ne se figent.<\/p>\n<\/li>\n<li data-start=\"1669\" data-end=\"1762\">\n<p data-start=\"1671\" data-end=\"1762\">Reversez le m\u00e9lange dans la casserole et faites-le cuire, en remuant constamment, jusqu&rsquo;\u00e0 ce qu&rsquo;il \u00e9paississe.<\/p>\n<\/li>\n<li data-start=\"1766\" data-end=\"1843\">\n<p data-start=\"1768\" data-end=\"1843\">Retirez du feu et ajoutez le beurre. Laissez refroidir la cr\u00e8me p\u00e2tissi\u00e8re. <\/p>\n<\/li>\n<\/ul>\n<h4 data-start=\"1845\" data-end=\"1883\">3. <strong data-start=\"1853\" data-end=\"1883\">Pr\u00e9parez le gla\u00e7age au chocolat :<\/strong><\/h4>\n<ul data-start=\"1887\" data-end=\"2049\">\n<li data-start=\"1887\" data-end=\"1952\">\n<p data-start=\"1889\" data-end=\"1952\">Faites fondre le chocolat avec l&rsquo;eau dans une casserole \u00e0 feu doux.<\/p>\n<\/li>\n<li data-start=\"1956\" data-end=\"2049\">\n<p data-start=\"1958\" data-end=\"2049\">Ajoutez le sucre glace et m\u00e9langez bien.
