Le nom \u00ab\u00a0anguille en vert\u00a0\u00bb fait r\u00e9f\u00e9rence \u00e0 l&rsquo;anguille pr\u00e9par\u00e9e dans une sauce verte, qui doit sa couleur \u00e0 l&rsquo;utilisation d&rsquo;herbes, comme le persil, et parfois \u00e0 l&rsquo;ajout d&rsquo;autres ingr\u00e9dients verts comme le c\u00e9leri ou les \u00e9pinards. Il est important d&rsquo;enlever la peau de l&rsquo;anguille si ce n&rsquo;est pas d\u00e9j\u00e0 fait. Vous pouvez souvent demander cette op\u00e9ration \u00e0 la poissonnerie.  <\/p>\n<\/li>\n<\/ul>\n<\/li>\n<li data-start=\"969\" data-end=\"1128\">\n<p data-start=\"972\" data-end=\"991\"><strong data-start=\"972\" data-end=\"991\">Faire du bouillon :<\/strong><\/p>\n<ul data-start=\"995\" data-end=\"1128\">\n<li data-start=\"995\" data-end=\"1128\">\n<p data-start=\"997\" data-end=\"1128\">Faites chauffer le fumet de poisson dans une grande casserole et ajoutez l&rsquo;oignon, la carotte, le poireau, la feuille de laurier et les grains de poivre. Portez \u00e0 \u00e9bullition. <\/p>\n<\/li>\n<\/ul>\n<\/li>\n<li data-start=\"1130\" data-end=\"1377\">\n<p data-start=\"1133\" data-end=\"1150\"><strong data-start=\"1133\" data-end=\"1150\">Cuisson des anguilles :<\/strong><\/p>\n<ul data-start=\"1154\" data-end=\"1377\">\n<li data-start=\"1154\" data-end=\"1377\">\n<p data-start=\"1156\" data-end=\"1377\">Ajoutez d\u00e9licatement les morceaux d&rsquo;anguille au bouillon. Baissez le feu et laissez l&rsquo;anguille cuire doucement. Cela prendra environ 15 \u00e0 20 minutes. Veillez \u00e0 ce que l&rsquo;anguille ne cuise pas trop, sinon la chair deviendra trop s\u00e8che.   <\/p>\n<\/li>\n<\/ul>\n<\/li>\n<li data-start=\"1379\" data-end=\"1664\">\n<p data-start=\"1382\" data-end=\"1403\"><strong data-start=\"1382\" data-end=\"1403\">Pr\u00e9parer une sauce aux herbes :<\/strong><\/p>\n<ul data-start=\"1407\" data-end=\"1664\">\n<li data-start=\"1407\" data-end=\"1535\">\n<p data-start=\"1409\" data-end=\"1535\">Faites fondre le beurre dans une autre po\u00eale et ajoutez l&rsquo;ail coup\u00e9 en tranches. Faites frire l&rsquo;ail bri\u00e8vement, sans le laisser brunir. <\/p>\n<\/li>\n<li data-start=\"1539\" data-end=\"1664\">\n<p data-start=\"1541\" data-end=\"1664\">Ajoutez le persil, le c\u00e9leri et \u00e9ventuellement la ciboulette et faites frire bri\u00e8vement jusqu&rsquo;\u00e0 ce que les herbes commencent \u00e0 lib\u00e9rer leur parfum.<\/p>\n<\/li>\n<\/ul>\n<\/li>\n<li data-start=\"1666\" data-end=\"1960\">\n<p data-start=\"1669\" data-end=\"1681\"><strong data-start=\"1669\" data-end=\"1681\">Finition :<\/strong><\/p>\n<ul data-start=\"1685\" data-end=\"1960\">\n<li data-start=\"1685\" data-end=\"1882\">\n<p data-start=\"1687\" data-end=\"1882\">Ajoutez d\u00e9licatement l&rsquo;anguille cuite \u00e0 la po\u00eale d&rsquo;assaisonnement et m\u00e9langez bien le tout.
